Watermelon Cake In Canada

salade melon d eau feta

Celebrate your next special occasion with the Medisys free-of-refined-sugar watermelon birthday “cake” and see just how sweet sugar-free living can be! For the cake base, simply remove the rind from a watermelon and slice around the edges to create a rind-less circle ready to be lathered with icing. The base for the “icing” is plain Greek yogurt – we recommend opting for 0-2% MF. For extra-thick icing that will stay put, try straining excess liquid from your Greek yogurt by placing it in a cheesecloth-lined sieve over a mixing bowl in the fridge overnight – this will concentrate your Greek yogurt.

Sugar free icing:

  • Stir together 4 cups plain Greek yogurt, ½ teaspoon vanilla extract (or the seeds of 1 vanilla bean), and ½ cup shredded unsweetened coconut.
  • Cover your watermelon base with the ‘icing’ mixture and garnish.

Some of our favourites garnishes include:

  • Chopped pistachios and fresh figs
  • Blackberries and fresh basil
  • Fresh black or red currants with edible flowers
  • Sliced kiwi and dragon fruit

This free-of-refined-sugar watermelon birthday “cake” makes an excellent addition to any celebration. This recipe can be made as cupcakes too.

Watermelon Feta Mint “Cake”

Entertain without sugar and impress your guests with a meal they’ll never forget – think watermelon salad meets royal dinner party. Slice up this savoury “cake” and serve it as a side dish paired with BBQ’d fish, grilled chicken, or on its own as a refreshing appetizer.

Creamy feta “icing”:

  • In a food processor blend 1 cup plain Greek yogurt with ½ cup of feta cheese (Bulgarian or Macedonian feta works best). In a mixing bowl, fold the blended feta mixture with 3 cups of plain Greek yogurt and the zest of one lemon.
  • Cover your cake base with icing and garnish it the way that you would your favourite watermelon salad.

Some of our favourites garnishes include:

  • Yellow and red cherry tomatoes
  • Cucumber ribbons and arugula
  • Fresh mint
  • Lemon zest
